Chocolate Protein Cups


I'm still enjoying creating some recipes with Beyond Equator 5 Seed Butter. Chocolate is always on my mind, but this time I decided to keep it simpler than the Flourless Five Seed Cake.

This recipe is also nut-free, gluten-free, and loaded with protein, though it tastes like dessert. There is very little sugar in these cups, but if you'd like to also make it sugar free, use sugar-free chocolate chips.


INGREDIENTS

1/2 cup Beyond Equator 5 Seed Butter*
1 cup Dark chocolate chips
1 tablespoon sesame oil
1/2 teaspoon vanila extract

*I used the Chia, Flax, Pumpkin, Sunflower, Hemp Crunchy

  • Place paper liners in a mini-muffin pan. The recipe is for 12.

  • Microwave chocolate and seed butter on high for one minute.

  • Stir mixture. If not fully melted, put in for 30 seconds more.

  • Blend in vanilla.

  • Use a funnel to evenly distribute the chocolate.

  • Refrigerate for at least two hours before eating
