Mediterranean Crockpot Chicken



Sometimes I know exactly what I want to make and other times nothing in my recipe file (aka Pinterest). The latter happened one day when I was standing next to a packages of boneless, skinless chicken thighs.

I took out my crockpot and started looking through my refrigerator and my cabinets. My eyes immediately focused on one of the marinades from my cousin's line, Scott's Food Products. I took out the Mediterranean Garlic Marinade and grabbed some potatoes from the fridge. Before I knew it, I had put together this simple and delicious recipe




INGREDIENTS
1/2 bottle of Scott's Mediterranean Garlic Marinade
1-1/2 pounds boneless, skinless chicken thighs
1/2 cup water
1 cup chicken broth
2 pounds small potatoes, cut in half
1/2 cup feta cheese (optional)



INGREDIENTS

  • Pour marinade into a ziploc bag.

  • Add chicken, close bag and shake to coat chicken.

  • Let chicken marinade in refrigerator for 30 minutes

  • Put chicken and potatoes in a crockpot.

  • Cover with water and chicken broth.

  • Turn temperature to low for six hours.

  • Before serving, sprinkle with feta cheese
