Best Chocolate Chip Cookies




I have been making chocolate chip cookies since I was a kid, and I've been adjusting that recipe all along the way.


It took many years before I could say, "this is my perfect chocolate chip cookie." I'm usually one for making it simple and throwing everything in the bowl and then the oven. If you want the best-ever chocolate chip cookies, you have to follow the details.


Some of those details include specifics, such as Country Crock (unsalted) sticks, Mexican vanilla, and Nestle Semi-Sweet Chips. I have also worked to perfect the sugar ratio, using three different kinds, and there are precise cooking directions.





INGREDIENTS
2 Cups (4 sticks) Country Crock no-salt baking sticks
1/2 cup light brown sugar
1/2 cup dark brown sugar
1 cup granulated sugar
1 teaspoon vanilla
3 large eggs
4 cups All-purpose white flour
2 teaspoons baking soda
4 cups (24 oz) Nestle Semi-Sweet Chocolate Chip Cookies

*Take the Country Crock sticks out of refrigerator at least an hour before for easy blending.



Instructions

  • Preheat oven to 350 degrees.*

  • Spray a large cookie pan* with Original Pam**

  • Blend Country Crock Sticks with sugars until smooth with an electric mixer.

  • Beat in eggs and vanilla.

  • ON the slowest speed, mix in the flour and baking soda.

  • Mix the chocolate chips with a spatula, by hand.

  • Drop cookies, at least a half inch apart on all sides, with a cookie scoop (I use the medium one).

  • Bake for 8-10 minutes. Take cookies out of oven when they are slightly brown on the bottom and just cooked (not loose) on the top.*

  • Leave cookies in pan to finish browning out of the oven, slowly, for 10-15 minutes.

  • When cookies look just right, transfer them to a cooling rack for another 15 minutes. (Of course, you should sample them when they are still warm :) )

  • *You're going to have to adjust to your oven. It may mean the first batch or two aren't perfect, but once you get the formula, all your cookies will be delicious!
    **I spray the pan every other batch.
