Loaded Sweet
Potato Brownies



I received another package of food items to try from Edward & Sons. They always have healthy items that I find make interesting recipes. (I especially love this Pulled Jackfruit.)

What caught my eye in this box was the Let's Do Organic Sweet Potato Flour. I loved sweet potato and it's a great way to make some healthier, gluten-free treats.


I had brownies on the mind immediately, but I actually didn't want anything too sweet. I wanted to mix up the flavor of the sweet potatoes, with the texture of nuts and chocolate -- highlight on chocolate.


I put together a couple of different recipes to create these Loaded Sweet Potato Brownies.


INGREDIENTS
4 tablespoons butter, softened
1/3 cup granulated sugar*
1 teaspoon vanilla extract
2 Eggs
1/2 cup plain non-fat Greek Yogurt
3/4 cup Let's Do Organic Sweet Potato Flour
1/2 cup cocoa powder
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup semisweet chocolate chips
1/4 cup chopped walnuts


Instructions


  • Spray an 8x8 square pan with cooking spray.*

  • Beat sugar into butter

  • Add eggs, vanilla, and yogurt.

  • Mix together sweet potato flour, cocoa powder, salt, and baking soda.

  • Stir dry ingredients into wet ones..

  • Spread into pan.

  • Cook on 350 degrees for 20 minutes, or until set in the center.

  • Cool before cutting.

  • *These brownies are more bittersweet than sweet. Use 1/2 cup of sugar if you like them sweeter.
    **I also use loaf pans for small batch brownies.
